Description
The story of the Fondazione Edmund Mach begins on January 12, 1874, when the Tyrolean Regional Diet of Innsbruck decided to establish an agricultural school with an attached experimental station in San Michele all’Adige. Today, the estate extends over 120 hectares of farmland and 80 hectares of forest, distributed across the most suitable areas of Trentino. A unique and distinctive aspect of this estate is the direct involvement of students from the Agricultural Institute of San Michele all’Adige, who not only learn the theory but also actively participate in the care of the vineyards and wine production. This “hands-on” educational approach allows knowledge and winemaking techniques to be passed down, combining tradition and innovation in a complete and immersive learning experience. The winery, located inside a 12th-century Augustinian Monastery, is an architectural gem that blends historic charm with modernity. Over the years, it has been expanded and equipped with state-of-the-art technology, a distillery, and a facility for Metodo Classico sparkling wine production. Spiritson is an integral and fundamental part of Fondazione Edmund Mach’s wine production chain. Here, using a traditional discontinuous bain-marie still — a symbol of Trentino distillers — pomace from the estate is distilled to produce single-varietal grappas of great elegance and personality, reflecting the unique characteristics of each grape. Additionally, the distillery produces fruit brandies (apples, pears, cherries, and apricots from in-house cultivation), creating a full-cycle Spiritson process. Careful raw material management, combined with traditional and expert techniques, is the secret behind the fragrance and quality of the spirits, enriching the Fondazione’s portfolio. The overall goal is to produce wines and spirits that fully express the Trentino terroir, highlighting the training and experimental work of the students, the true heart and future of Fondazione Edmund Mach.
