Description
The winery, owned by Salvatore Grasso, was established at the foot of an ancient extinct crater called “Montedolce,” from which it takes its name. This striking area is located at about 850 meters above sea level, on the edge of the Etna Park, in a unique territory characterized by volcanic soils extremely rich in valuable minerals, which give the vineyards particular fertility and identity. The land, arranged in large terraces, is rocky and rather arid, conditions that encourage the vines to develop deep roots in search of essential nutrients. The area is also marked by significant temperature differences between day and night and by constant ventilation that mitigates the summer heat, helping maintain the physiological balance of the grapes and preserving their freshness, aromas, and acidity. These natural characteristics, combined with the passion and artisanal care of Salvatore Grasso, produce wines of great structure, complexity, and finesse—an authentic expression of the volcanic Etna terroir.
