Vinification
After careful selection of the grapes, fermentation takes place in stainless steel tanks at controlled temperature, with frequent pump-overs and extended skin maceration.
Aging
At the end of winemaking, the “vino fiore” is aged for at least three years in Slavonian and French oak barrels of 30–50 hectoliters; four years after the harvest, it is bottled and continues its maturation in the bottle for at least four months.
