Vinification

The grapes are left to macerate for 12–18 hours in order to extract from the skins the right shade of colour and the typical aromatic substances of Negroamaro and Malvasia Nera. The free-run must (40%) is then fermented at 14–15 °C in stainless steel tanks until the end of alcoholic fermentation.
