Vinification
Gentle destemming, soft crushing of the berries, and vinification in temperature-controlled vessels. Fermentation is carried out by the naturally occurring yeasts on the grapes, with extended skin contact for about three weeks, during which gentle daily pump-overs are performed to extract the noble compounds from the skins. Once the skins are separated from the wine, spontaneous malolactic fermentation begins, partly in stainless steel and partly in barriques.
Aging
Aging of the individual varieties for 12–14 months in French oak barriques. Further aging of 3 months in the bottle before release.

Appearance
Deep purple in colour.
Nose
It reveals notes of blackberry, strawberry jam, and black currant. It shows a lovely floral freshness, with Damask rose and mentholated hints of eucalyptus and peppermint.
Taste
A firm tannic grip on the palate, with subtle herbal notes blending with green pepper, tobacco, and Mediterranean scrub. The finish is lively and fresh, fruity, and delicately sweet.
