Vinification
Gentle destemming, soft crushing of the berries, and vinification at controlled temperature. Fermentation is carried out by the naturally occurring yeasts on the grapes, with skin contact lasting about 4 weeks, during which daily pump-overs are performed to extract the noble compounds from the skins. After separating the skins from the wine, spontaneous malolactic fermentation begins, partially in stainless steel and partially in barriques.
Aging
Aging of the individual grape varieties for 16–18 months in French oak barriques. Bottle aging for 6 months before release.

Appearance
Deep purple colour.
Nose
Notes of blackcurrant, lily of the valley, and blackberry, centifolia rose and candied violet, hints of lavender and Tuscan wild thyme, with a touch of mustard and black pepper.
Taste
Smooth on the palate, well-defined in style. Structure, firm tannins, and fruit are accompanied by spicy and balsamic notes. The finish unfolds with sweetness while still suggesting the intriguing potential for further aging.
