Vinification
As is customary for all red grapes, selected enzymes and yeasts are added, frequent pump-overs alternated with délestage are performed, and state-of-the-art equipment is used to allow very gentle pressing, even at the expense of juice yield, with temperature-controlled conical fermenters when cooling or heating of the must is required.
Aging
Bottling takes place only when the wine demonstrates high quality, usually at the beginning of summer. After bottling, it requires an additional period of bottle aging of at least 6 months.

Nose
Aroma of red forest fruits and ripe morello cherries, with only light toasted notes and hints of toast.
Taste
Vigorous and energetic on the palate, finishing clean and full-bodied.
