Vinification
As is customary for all red grapes, highly selected enzymes and yeasts are added, using advanced winemaking techniques (pump-overs alternated with délestage) and state-of-the-art equipment that allows very gentle pressing, even at the expense of juice yield, in temperature-controlled conical fermenters suitable for both cold and warm conditions.
Aging
Although produced only in exceptional vintages, it is usually bottled in early spring. By definition, it is the most challenging wine to vinify but delivers extraordinary results when carefully managed. A wine with an unmistakably promising future.
