Vinification
The grape clusters are left to rest in the "fruttai," dry and well-ventilated rooms suitable for drying.
Aging
In January, the fermentation process takes place, followed by maturation in barriques for approximately ten to twelve months. The wine then rests in the bottle for an additional 12 months.
