Vinification
White vinification, as is done for all white grapes, using selected yeasts and employing advanced winemaking techniques and equipment that allow very gentle pressing, even at the expense of juice yield.
Aging
It should be considered an exclusive vintage wine thanks to its pronounced acidity, which makes it unique. Its history allows it to be enjoyed even 2–3 years after bottling. Bottling usually takes place between the end of April and the beginning of May.
