Vinification
Vinification in stainless steel tanks at controlled temperature. The Valpolicella is poured over the Amarone pomace for a second fermentation of 15–20 days, following the traditional “Ripasso” technique.
Aging
The wine is aged for about 15 months in Slavonian oak barrels and tonneaux.
